I was excited to learn an Israeli firm has produced a 4-ounce cultivated steak, the largest of its kind to date. For those who don’t know, cultivated meat is grown from cells, without slaughter. It’s better for the environment, public health, and animal welfare. Whole-cut products, like steak, are an ongoing challenge for the nascent industry.
“The breakthrough is the culmination of over one year’s efforts in our cellular biology and high-throughput tissue-engineering processes, as well as our precision bioprinting technology,” the CEO of MeaTech 3D said. “We believe we have placed ourselves at the forefront of the race to develop high-end, cell-based meat products.”
Still, more government investment in open-access research is needed for the field to take off. This will help cultivated meat reach price parity with slaughtered meat, among other things. Legislators who care about reducing greenhouse-gas emissions, pandemic risk, and the suffering we cause animals, should support it.
